Smoke in Chimneys is a private farm and trout hatchery nestled in the Jefferson and Washington National Forests right off of route 42. A beautiful hub for real food and traditional practices in farming and land management, Smoke in Chimneys has spring-raised rainbow trout, beef and dairy cows, Icelandic laying hens, and Mulefoot pigs. Their menus feature products from their own farm as well as local gardens.

Whole Spring-Fed Rainbow Trout, Cleaned and dressed. Sold individually.
Smoked Spring-Fed Rainbow Trout, whole and dressed, fully cooked. Thaw and serve on top of crackers or crostini, or use on a charcuterie platter. Or reheat and serve as a main dish. Sold individually.
