~ SOFT CHEESES ~
Green Hill from Sweet Grass Dairy. This double cream, soft-ripened cow’s milk cheese is handcrafted in Thomasville, GA. Incredibly versatile with a wide range of pairing options; subtle mushroomy flavor with a silky texture. Sold in 7.5 oz rounds.
Maid Marian Camembert,Soft, creamy, and earthy. With its earthy, mushroomy aromas, this camembert cheese is similar in flavor to a brie, but offers deeper, stronger flavors in a spreadable texture. Unlike wax-coated Cheddar, the soft rind found on Camembert should be eaten.
Merry Goat Round, Firefly’s best-selling retail cheese, sustainably crafted in Accident, MA. Super creamy texture, clean flavor. Soft and bloomy rind which is edible at any stage of ripening. Sold in 6 oz rounds.
Round Hill from Village Cheeseworks. Camembert-style, creamy and buttery cow’s milk cheese. Sold in 5 oz rounds.

Nottingham Gouda,Nutty, smooth, buttery. Boasting a smooth texture, Nottingham is mild and sweet with notes of toasted hazelnuts and butter. A little crunch in each bite, that’s indicative of good, aged cheeses. The flavors get a lot stronger, and richer, as they age.
Merry Men Manchego, Creamy, tangy, and rich. Locksley’s take on a traditional Manchego, except with cow's milk. Aged for at least 6 months, The Merry Men Manchego boasts a creamy and tangy taste with notes of melted butter and beef broth. The piquant notes may remind you of parmesan, but its melt in your mouth texture and citrusy flavors make it truly unique.
Moo & Blue, With the deep buttery richness of a classic blue cheese, Firefly's cow’s milk blue isn’t bitter like many blue cheeses can be. There’s a lingering sweetness there and a notably clean flavor. Aged for at least 4 months, it may be unique, but it’s still true blue. Sold in 6 oz wedges.
